The Foodie in me!

As long as I can remember I absolutely love preparing food.

Cooking alongside my Mom in a Sicilian household, it was always a marathon. Keeping up with her from making fresh pasta,  vegetables cooked in different forms,    and meats uniquely prepared .

As I became an adult and a Mom, I realized that the main staples I was taught at a young age were pretty good using the freshest ingredients.  But what I learned a whole world of grains, fruits , vegetables, fish and meats could be prepared in so many different ways . Mastering techniques even my Mom seems impressed ! Even just a little!

My world became very different when I met my husband of 34 years ago who was a pescatarian and we decided to raise our  kids as vegetarians .  Living in a world of being health conscious in every aspect not only through food but introducing homeopathy, proper supplementation, better quality household products!  It was life changing but it felt absolutely wonderful.

My kids would call us the granola family!

Hey we weren’t perfect in anyway sometimes  candy, a cheese pizza , ice cream or a veggie burger with fries would sneakily show up from time to time.

What we learned and until today that creating your meals with proper fresh ingredients always made us feel great in every way.

My kids grew up in a household that everyone cooked together and loved eating with our extended family and friends.

In the spirit of my foodie world I will introduce a recipe that we all enjoy and my kids continue to make each month.


Millet Pilaf


1 cup of millet

2 cups of water or veggie stock

1 red bell pepper diced

1 large carrot  diced

1 large onion diced

1 large celery stick diced

1 tsp of Thyme

Salt and pepper to taste

2 tablespoons of olive oil


(Cook the millet just like cooking rice )

Add to a pot 2 cups of water or stock and add the millet

Simmer until fork tender

In a frying pan add olive oil , pepper, carrot, onion, and celery

Sauté until soft 5 to 8 mins.

Add Thyme salt and pepper.

Once the Millet is ready add it to the veggies and stir until everything is mixed together.

Serve right away or to add another element place in a casserole dish and bake at 400 for 30 to 40 mins . The top of the millet becomes nice and crispy!

You may add goat cheese or nuts as a topping.
